In Uzbekistan, new rules for catering will appear

From January 1, 2026, new requirements for public catering establishments aimed at reducing their negative impact on the environment have come into force in Uzbekistan. These measures are part of the wider state program “rational consumption”, approved by the resolution of the Cabinet of Ministers of September 16.

According to the new rules, all cafes and restaurants will be required to install special equipment for ventilation and air filtration. Particular attention is paid to institutions where food is prepared on an open fire, such as gas, coal or firewood. For them, the mandatory installation of captors of smells and pollutants will be mandatory.

In addition, from July 1, 2026, for connecting to a centralized sewage system, all catering enterprises will have to install fattylings. Owners of institutions will be required to clean them monthly. These measures are designed to reduce the entry of oil and fat waste into the sewer system.

The government also encourages the processing of such waste for the production of laundry soap or feed for animals, depending on their technical characteristics.

These innovations are part of a large -scale initiative to ensure food security in a country designed for 2026–2030. The Save Food program also includes measures to reduce food waste, including by strengthening control over weddings and other family celebrations, where excessive consumption of products is often observed.

As part of the program, it is planned to expand the use of fertilizers obtained by composting food waste in agriculture. For this, composting instructions based on the experience of developed countries will be developed and seminars for farmers are organized.

According to the Food and Agricultural Organization of the UN (FAO), about one third of all food products are thrown out annually in the world.
